Manual (Direct Lever) Espresso Machine

Manual espresso machines also known as Lever espresso machines are about as hands on as you can get and still produce that beverage we know today as espresso . These machines can frustrate , infuriate and leave you disappointed when you are a beginner but once you learn the Art of making espresso you can brew a perfect cup of espresso for yourself . 





There are two sub classes in Manual espresso machines . Spring piston lever and direct lever machines .Today we'll discuss about Direct lever machines. 

So,the Direct lever espresso machine rests with the lever in the down position and you can usually tell a direct lever machine by the position of the lever at rest. You'll have to apply pressure to the water, by pushing down on a lever, to brew a shot. That's about as hands on as you can get. And it requires a lot of practice and a good "touch" to get a great shot.

Pavoni is the main manufacturer of direct lever machines on the market today, but they also make machines that are rebadged as various Gaggia models. Pavoni has two popular versions, the Europiccola which has two thermostats and cannot steam and brew at the same time, and the Professional, which can, because of the heat-sink design of its group head. The Olympia Cremina is a direct lever machine as well.
